HELLO FITTIES So it is 2011 now, how have the first 5 days from the new year been?How was last year?Did you keep on FII? No? Salmon dinner!

Salmon is SO healthy! And quite delicious. I don't cook a lot of salmon though (usually chicken and steak) so when I made salmon tonight and it turned out fabulously, I was quite pleased. I'm actually still eating dinner as I write this up. i love it, and I want to share it with you guys!(This recipe is for one person, b/c i live by myself, but it can easily be doubled/tripled for more! Diet Variety

So today I've been tweeting back and forth with a friend who took a nutrition class, and I realized that I do not have nearly enough variety in my diet. It consists primarily of starch (pasta, rice, potatoes) and dairy. I like veggies, and I home cook all of my pasta sauces. But I need a better variety of foods that I can make. Snacks!

Sometimes it's like I eat like a hobbit with all the mini-meals I eat in between real-meals. And then sometimes at work I only have 15 minutes to chow down on something. Lately I've been trying out various protein bars, but I haven't found one that's really impressed me yet. Really, my favorite healthy snack right now is blueberries.
